Enjoy this nutritious Lip Licking Lentil Soup that is an ancient Egyptian family recipe with a modern touch. Ingredients: 1 packet of 400 grams Red Lentils 2 large Cloves Garlic 1 Onion – cut in quarters 1 Carrot Salt, pepper (to taste) 1/2 a Red Chilli or 1/2 tsp Cayenne Pepper 1 Tbsp Herbamere 1 Tbsp Cumin 1 Tbsp chopped parsley 2 Tbsp Coconut Oil or olive oil Lemon juice to taste Method: Soak lentils in filtered water for several hours. Change water a few times. Put lentils in a cooking pot and cover with filtered water. Add garlic cloves, onion and carrot. Cook until lentils are fluffy and vegetables have softened. Remove from stove and let sit until cool. Use a blender to liquefy ingredients until smooth. Return to the cooking pot and add chilli, cumin, Herbamere, salt and pepper. Add a little more filtered water to create a thick soup consistency. Heat until desired temperature and stir in coconut oil. Serve in bowels with a squeeze of lemon juice and a sprinkle of parsley.
