Red lentils are low in calories and are a powerhouse of nutrition. They are high in dietary fibre, protein, folate; iron, magnesium, calcium, zinc, niacin and vitamin K. All this means eating lentils will assist the growing, building and repairing of tissues in the blood, skin, bone and muscle cells; assist digestive health; stabilise blood sugar and cholesterol levels; assist heart health and prevent heart disease; improve oxygen and blood flow; help prevent digestive disorders such a constipation, Irritable Bowel Syndrome and Diverticulitis; as well as encourage weight loss. Enjoy this nutritious Lip Licking Lentil Soup that is an ancient Egyptian family recipe with a modern touch. Ingredients: 1 packet of 400 grams Red Lentils 2 large Cloves Garlic 1 Onion – cut in quarters 1 Carrot Salt, pepper (to taste) 1/2 a Red Chilli or 1/2 tsp Cayenne Pepper 1 Tbsp Herbamere 1 Tbsp Cumin 1 Tbsp chopped parsley 2 Tbsp Coconut Oil or olive oil Lemon juice to taste Method: Soak lentils in filtered water for several hours. Change water a few times.  Put lentils in a cooking pot and cover with filtered water.  Add garlic cloves, onion and carrot. Cook until lentils are fluffy and vegetables have softened. Remove from stove and let sit until cool. Use a blender to liquefy ingredients until smooth. Return to the cooking pot and add chilli, cumin, Herbamere, salt and pepper. Add a little more filtered water to create a thick soup consistency. Heat until desired temperature and stir in coconut oil. Serve in bowels with a squeeze of lemon juice and a sprinkle of parsley.
